Tomato curry recipe

Tomato curry is a good source of vitamin E and an excellent source of beta carotene, lycopene, lutein, vitamin C, vitamin D. It helps protect from various forms of cancer and lower the risk of heart disease.

Ingredients
Bengal gram dal
5 Grams
Tomato ripe local
250 Grams
Chillies green - all varieties
5 Grams
Coriander leaves
1 Table Spoon
Curry leaves
5 Grams
Onion big
100 Grams
Cumin seeds
0.5 Tea Spoon
Turmeric powder
0.5 Tea Spoon
Mustard seeds
0.5 Tea Spoon
Rice bran oil
1 Table Spoon
Salt
0.5 Tea Spoon
Red chilli powder
0.5 Tea Spoon
Instructions

Chopping
Chop the tomatoes and onions into small pieces

Seasoning
Heat the oil in a nonstick pan, add the mustard seeds, cumin seeds, chana dal (bengal gram dal), curry leaves, and green chilies. Saute them until the seeds start spluttering.

Cooking
Add the chopped vegetables to the pan with seasoning and mix them thoroughly. Cook the mixture for 10 minutes and once the tomato pieces are tender add salt along with turmeric. Cook it further for 5 more minutes and add red chili powder. Mix the ingredients thoroughly and allow it to cook for 5 more minutes.

Serve
Once the curry is done, garnish with coriander and serve it hot with rice or roti
