Broccoli and carrot soup recipe

Broccoli and carrot soup is a healthy snacking alternative to those oil-fried snacks. Carrots are an excellent source of vitamin A biotin, vitamin K, dietary fiber, whereas broccoli is rich in sulforaphane.

Cooking time: 10 minutes

Serves: 7 persons

Ingredients
Low fat milk
100 Milliliter
Broccoli raw
100 Grams
Ghee clarified butter
1 Table Spoon
Carrot orange
250 Grams
Coriander leaves
10 Grams
Garlic small clove
10 Grams
Onion big
100 Grams
Salt
2 Grams
Water
150 Milliliter
Instructions

Washing and Chopping
Wash the carrots, broccoli, onions, and garlic cloves and chop them roughly.

Sauteeing
In a pan add little oil, sautee chopped garlic and onions for one minute till it becomes translucent.

Pressure Cooking
Pressure cook the carrots,broccoli, sauteed onion and garlic for 2-3 whistles.Once done allow the steam to escape before opening the lid.

Cooling and Blending
Cooling slightly and transfer the ingredients into a blender and blend it until smooth.

Simmering
Transfer the mixture into a deep non stick pan, add milk, salt, black pepper powder, mix well and cook on a medium flame for two minutes while stirring occasionally.

Serving
Once done pour it in a serving bowl. Serve hot with brown bread or toast.
