Mutton kebab recipe

Mutton kebab is highly tasty and delicious recipe loaded with niacin, iron, phosphorus and zinc, and a very good source of protein, vitamin B12 and selenium.

Ghee clarified butter
2 Tea Spoon
Sunflower oil
3 Table Spoon
Bengal gram dal
100 Grams
Lemon juice
1 Table Spoon
Chillies green - all varieties
5 Grams
Coriander leaves

Mint leaves
15 Grams
Onion small
100 Grams
Cardamom green
2 Grams
Cloves
2 Grams
Cumin seeds

Mace

Turmeric powder

Goat shoulder

Water
250 Milliliter

Instructions

Wash the meat
Wash the minced meat thoroughly and drain excess water.

Cook the minced meat
In a bowl soak ½ cup of chana dal for 30 minutes. Heat 2 tbsp ghee in a pressure cooker. Add cinnamon stick, mace, cloves, bay leaf, green cardamoms, black peppercorns, cumin, coriander powder, turmeric Mix them thoroughly. When they crackle add minced meat to it. Now add salt and red chili powder. Mix it thoroughly and cook for a minute.

Pressure cook
Add soaked chana dal and mix it well by adding a cup of water. Pressure cook the mixture until the mutton gets soft. After 1-2 whistles remove the cover and mix it well. If water remains, cook till the mutton dries up.

Grind the mutton
Cool the mutton, grind and then refrigerate for 30 minutes to get a thick paste. Mix onion, green chilli, coriander leaves, mint leaves and lime juice to this paste and mix thoroughly.

Shallow fry
Make flat balls out of this dough and refrigerate for another 10 minutes. Heat a tbsp of oil in another pan and shallow fry the kebabs from all sides until golden brown. Place them on absorbent paper and serve hot.
