Kacha kochu bhaji recipe

Kacha kochu bhaji/Plantain stir fry is a good source of dietary fiber, potassium, vitamin D, magnesium, vitamin E, and excellent source of vitamin C. It helps boost immunity and aids in digestion.

Cooking time: 15 minutes

Serves: 3 persons

Ingredients
Plantain green
250 Grams
Coriander leaves
1 Table Spoon
Curry leaves
5 Grams
Cumin seeds
1 Tea Spoon
Mustard seeds
1 Tea Spoon
Rice bran oil
1 Table Spoon
Salt
0.5 Tea Spoon
Red chilli powder
0.5 Tea Spoon
Instructions

Chopping
Peel the plantain skin and chop them into small pieces. Soak the pieces in a bowl of water mixed with a spoon of curd to prevent blackening (oxidation) of the pieces.

Cooking
Heat the oil in a nonstick pan, add mustard seeds, cumin seeds, and curry leaves. Once the seeds splutter add the plantain pieces. Mix the ingredients well. Cook until the plantain pieces turn tender. Add salt and red chili powder. Cook for 5 more minutes.

Serve
Garnish with coriander. Serve hot with steamed rice and ghee.
