Lobia roti recipe

Lobia roti is a good source of dietary fiber, phosphorus, magnesium, and an excellent source of vitamin D, selenium, and manganese. HINT: It helps strengthen bones and aids in weight loss. 

Cooking time: 10 minutes

Serves: 13 persons

Ingredients
Whole wheat flour
300 Grams
White cowpea
100 Grams
Chillies green - all varieties
10 Grams
Coriander leaves
10 Grams
Ginger fresh
2 Grams
Rice bran oil
2 Tea Spoon
Salt
1 Grams
Water
100 Milliliter
Cumin powder
0.5 Tea Spoon
Instructions

Soaking
Soak the lobia overnight and then pressure cook it till done.

Grinding
In a blender add lobia (Soaked and boiled by adding salt) ginger, cumin seeds, green chili, and make it into a paste.

Make the dough
Transfer the paste into a bowl and add wheat flour, chopped coriander, then mix it like a chapati dough.

Roll out the dough
Pinch a small ball-sized dough and knead again. Dust with flour and pat gently. Pat with both hands until the roti turns as thin as possible.

Cooking
Dust off excess flour and put over hot tawa, now spread water over the roti with help of hand or wet cloth removing excess dough. Wait until the water evaporates then flip it to the other side. Press gently and cook all the sides

Serving
Finally, serve roti with curries, dals, or chutney.
