Mixed vegetable soup recipe

Mixed vegetable soup is a good source of dietary fiber, alpha-carotene, lutein, magnesium, copper, manganese, vitamin B6, biotin, and an excellent source of vitamin C, vitamin D, beta carotene. HINT: It helps in strengthening muscles and boosting immunity.

Ingredients
Corn raw
50 Grams
Ghee clarified butter
1 Table Spoon
French beans country
50 Grams
Onionstalk
50 Grams
Peas fresh
50 Grams
Carrot orange
50 Grams
Coriander leaves
20 Grams
Garlic small clove
10 Grams
Ginger fresh
5 Grams
Onion big
100 Grams
Salt
0.5 Tea Spoon
Water
200 Milliliter
Black pepper powder
1 Tea Spoon
Instructions

Washing
Wash the vegetables thoroughly with water.

Chopping
Chop the vegetables into dice. Chop coriander ginger and garlic.

Sauteeing
Heat ghee in a pressure cooker, add chopped ginger, garlic, and onions. Fry onions until they turn translucent. Add all the other vegetables and saute them for 3-4 minutes.

Pressure cooking
Add salt, black pepper powder, water, and pressure cook for 3-4 whistles.

Simmer
Transfer it into a deep nonstick pan and let it simmer for few minutes. Adjust the salt and black pepper.

Serving
Transfer it to serving bowl, garnished with coriander leaves. Serve hot.
