Moringa leaves chutney recipe

Moringa leaves chutney is a good source of protein, potassium, iron, thiamine, riboflavin, phosphorus, selenium, and an excellent source of dietary fiber, calcium, iron, vitamin C, vitamin D, beta carotene, lutein, vitamin B6, vitamin E, magnesium, copper, and manganese. HINT: It helps lower blood pressure, blood sugar and is also a sleep aid.

Serves: 12 persons

Ingredients
Sesame seeds
2 Tea Spoon
Black gram dal
2 Tea Spoon
Drumstick leaves
100 Grams
Tamarind pulp
1 Table Spoon
Onion small
25 Grams
Asafoetida
0.5 Tea Spoon
Chillies red
10 Grams
Rice bran oil
2 Tea Spoon
Salt
1 Grams
Instructions

Washing
Wash the leaves and pat dry them. keep aside.

Sauteing
Heat oil in a pan, add the dal and toast until it turns golden brown. Once the dal is roasted, add the red chilies, and asafoetida, and roast for a few seconds. Stir in the onions and saute until it is cooked through. Add the drumstick/ moringa Leaves and saute until softened. Stir in the salt and tamarind and turn off the heat. Allow the mixture to cook.

Grinding
Once cooled, add the cooked ingredients into a blender and make a coarse chutney-like mixture called thogayal. Blend without adding any water, so it stays for a longer time.

Serving
Serve this along with hot steamed rice, idlis or dosas.
