Begun Dal/Brinjal dal is a good source of protein, dietary fiber, potassium, lutein, beta carotene, copper, selenium, thiamine, and an excellent source of vitamin D. It aids in muscle building and improves red blood cell count.

Ingredients
Red gram dal
150 Grams
Short purple brinjal
100 Grams
Tomato ripe local
50 Grams
Chillies green - all varieties
10 Grams
Coriander leaves
10 Grams
Curry leaves
10 Grams
Onion small
50 Grams
Turmeric powder
1 Grams
Rice bran oil
1 Table Spoon
Salt
1 Tea Spoon
Water
200 Milliliter
Ginger garlic paste
0.5 Tea Spoon
Red chilli powder
0.5 Tea Spoon
Instructions

Pressure cooking
Pressure cook toor dal with little turmeric till soft. Set aside.

Cooking
Heat oil in a pan, add onions, tomatoes and saute for 3 mins. Add in brinjal and mix well. Add salt, turmeric, chili powder and mix well. Add water and cook till brinjal is done. Add in dal and mix well. Simmer for 5 mins. Add coriander leaves and mix well.

Serving
Transfer dal into serving bowls and serve.
