Hari phool gobi soup is a good source of fiber, potassium, calcium, vitamin D, beta carotene, phosphorus, vitamin B6, folate, and an excellent source of vitamin C, lutein, zeaxanthin, and sulforaphane. HINT: It helps manage diabetes and reduces inflammation.

Ingredients
Broccoli raw
250 Grams
Ghee clarified butter
1 Table Spoon
Coriander leaves
15 Grams
Garlic small clove
10 Grams
Onion big
100 Grams
Nutmeg
2.5 Grams
Whole buffalo milk
100 Milliliter
Salt
0.5 Tea Spoon
Water
100 Milliliter
Black pepper powder
1 Tea Spoon
Instructions

Washing and soaking
Chop the broccoli into florets, soak them in hot water for at least 10 minutes.

Chopping
Chopping onions, and garlic cloves roughly.

Cooking
Heat a saucepan, add oil or ghee, chopped garlic, and onions. Saute until the onions are translucent. Add the blanched and drained broccoli florets along with some water to cook and salt to taste. Cook this until the florets and stems are tender. Switch off the flame, allow it to cool.

Blending
Transfer the ingredients into a blender and blend it until smooth.

Simmering
Transfer the soup into a saucepan, allow it to reach a boil, and add black pepper powder and nutmeg powder. Check for salt and add, if required. Now add milk, mix, and switch off the flame.

Garnishing
Once done pour it in a serving bowl garnished with coriander leaves. Serve hot with brown bread or toast.
