Thakkali Kose Soup recipe

Thakkali Kose Soup is a good source of dietary fiber, vitamin C, vitamin D, alpha-carotene, lycopene, manganese, and an excellent source of lutein, beta carotene. HINT: It helps in strengthening muscles and boosting immunity.

Cooking time: 10 minutes

Serves: 3 persons

Ingredients
Ghee clarified butter
1 Table Spoon
Green cabbage
50 Grams
Tomato ripe local
100 Grams
Carrot orange
50 Grams
Coriander leaves
15 Grams
Garlic small clove
10 Grams
Onion big
100 Grams
Cardamom green
2.5 Grams
Salt
0.5 Tea Spoon
Water
250 Milliliter
Black pepper powder
1 Tea Spoon
Instructions

Washing
Wash and roughly cut tomatoes, cabbage, carrot, into pieces.

Chopping
Chop onions, and garlic cloves roughly.

Cooking
Heat a pressure cooker, add oil or ghee, chopped garlic, and onions. Saute until the onions are translucent. Add the tomatoes, cabbage, and carrots and saute for 3 minutes. Add black pepper, cardamom and salt to taste. Add water to cook. Pressure cook this until they are tender, 2-3 whistles. Switch off the flame, allow it to cool.

Blending and seiving
Transfer the ingredients into a blender and blend it until smooth. Now sieve this mixture.

Simmering
Transfer the soup back to the saucepan. Allow it to reach a boil, and add black pepper powder. Check for salt and add, if required.

Garnishing
Once done pour it in a serving bowl garnished with coriander leaves. Serve hot with brown bread or toast.
