Begun Bhaji recipe

Begun Bhaji/Brinjal fry is a good source of dietary fiber, vitamin E, beta carotene, lutein, and an excellent source of vitamin D. It helps in weight management and aids digestion.

Serves: 3 persons

Ingredients
Long purple brinjal
250 Grams
Coriander leaves
1 Table Spoon
Curry leaves
5 Grams
Garlic big clove
1 Tea Spoon
Cumin seeds
0.5 Tea Spoon
Turmeric powder
0.5 Grams
Mustard seeds
0.5 Tea Spoon
Rice bran oil
1 Table Spoon
Salt
0.5 Tea Spoon
Red chilli powder
0.5 Tea Spoon
Instructions

Chopping
Chop the brinjal and add the pieces to a bowl of water with a pinch of turmeric.

Cooking
Heat the oil in a nonstick pan, add mustard seeds, cumin seeds, chopped garlic, and curry leaves. Once the seeds splutter add the brinjal pieces. Mix the ingredients well. Cook until the brinjal pieces turn tender. Add salt and red chili powder. Cook for 5 more minutes.

Garnish with coriander. Serve hot with steamed rice and ghee.
