Peef Kabsa recipe

Peef Kabsa/Beef kabsa recipe is a delicious preparation of beef cooked served over a layer of basmati rice. It is packed with flavours and taste of the perfect blend of spices.

Ingredients
Sunflower oil
100 Milliliter
Tomato ripe local

Lemon juice

Carrot orange
50 Grams
Ginger fresh
5 Grams
Onion small
200 Grams
Cardamom green
2 Tea Spoon
Cloves
3 Grams
Cumin seeds

Turmeric powder

Cashew nut

Beef shoulder
500 Grams
Salt

Instructions

Wash and soak the rice
Wash 2 cups of basmati rice thoroughly. Add 1 teaspoon turmeric powder to the washed rice and soak in water for 1 hour. Turmeric is added to give a golden color to the rice grain.

Wash and chop the vegetables
Wash and chop the vegetables and keep them aside. In a grinder jar, add chopped tomatoes and make a puree of it.

Wash the beef
Wash the beef thoroughly, drain water and keep aside.

Saute ginger and onion
In a big pot, add vegetable oil, chopped onion, and ginger. Fry on medium heat until brown.

Fry the beef
Add the beef and brown it on both sides. Add the cardamom powder, cumin, cinnamon powder, clove powder, dried lime, bay leaf, salt, and pepper and mix well.

Cook the beef
Add the tomato paste and the chopped tomatoes and cook until the oil rises to the top. Add 1 liter – 4 cups of water, cover, and let the beef cook for 25 minutes on medium-high heat.

Fry almond and raisin
In the meantime, fry the raisins until plump and brown in a little bit of oil, drain them, and keep them aside. Then do the same thing with the cashewnuts and almonds. Keep aside.

Cook in oven
Once the beef is cooked, remove it from the pot and put it in a baking pan. Add lemon juice. Broil it in a hot oven for 5 to 10 minutes. Keep aside.

Cook the rice
Drain the rice and put it in the vessel where the beef was cooked. Add the shredded carrots and mix well. Cover with a clean tea towel and then cover with a lid (this will prevent the steam from evaporating too quickly). Cook the rice for 20-25 minutes on medium heat.

Serve hot
Serve the rice topped with beef and roasted almonds, cashewnuts, and raisins.
